Spicy Fried Rice - Nyonya Style

We love this spicy fried rice and it is my grandma's original recipe - Nyonya Fried Rice. A must to try, it is a simple recipe and yummy to taste. I have occasionally served this during small parties or office potluck parties and I found it is classified under "favourites" simply because the tray is first to be cleared....hahaha I cant help to say it is "Yum! Yum!"

The good blend of chilly, garlic and dried shrimps brings great aroma to the fried rice, together with chopped cabbage and eggs. Wow! Taste real good...and beautiful color too.."hitam manis"

Yes...these are the only ingredients that will give a perfect meal..
Short preparation time : Pre-cooked the rice, frying time is less than 30 mins



Serve 4
  • 1.5 cup cooked rice - leave to cool if it is not overnight
  • 1/2 clove garlic - chopped
  • 2 Tbs chilly paste
  • 2 handsful of dried shrimps
  • 2 eggs
  • some chopped cabbage - if you like more, add on
  • 1 Tbs dark soya sauce and salt - to taste
  • a sprig of spring onion - for garnishing

Simple Process :
  1. Heat the wok with a little oil, stir fry the garlic, chilly paste and dried shrimps till aromatic
  2. Add in the cabbage, give a good stir
  3. Lower the heat, add in the rice, dark soya sauce, pinch of salt and mix well with the ingredients, keep stirring for about 5-8 minutes
  4. Make a hole in the centre of the wok of rice, knock in the eggs and let it cook slightly
  5. Then, cover it with the whole lot of rice and stir well to evenly spread out the eggs to the rice.
  6. Voila......Ready to serve, garnish with chopped spring onions to give it some "greens"..
