Fish Porridge

Here comes lazy mum delicious warm bowl of fried fish porridge for the family, fast , easy to prepare and good to eat.....yummy! Yes it is nice to have soft diet once a while. The porridge taste great with lots of fried chopped garlic and chopped fresh coriander.

Simply go through this process and enjoy a delicious home cooked porridge with no MSG...

Serve 4 person : 1.5 cup rice, 1 medium size fish

1. First have a medium size fish of your choice, cut into pieces, drain dry, rub a little salt on the surface and fry it till golden brown. Set aside

2. Steam the rice or cook it in the rice cooker with slightly extra water to get a soft texture

3. Scoop the cooked rice into a pot, add water about double the amount of the cooked rice and bring it to boil over medium heat till the rice grain looks "open up". It will take about 10-15 minutes
of boiling time depending on how soft the cooked rice is.

4. Add in some salt and the fried fish cutlets and allow it to boil for 5 minutes. Scoop it into bowl to serve and garnish with fried garlic and chopped coriander or alternatively spring onion and a dash of pepper

Chicken Porridge - Congee

Lazy mum presenting a simple and easy to prepare meal, chicken porridge. I just love to cook porridge simply because it is easy to prepare and nice to eat. I have garnished this chicken porridge with strips of roasted seaweed and fried chopped garlic.

All you need : Serve 4

1 big piece of chicken thigh
1.5 cup rice
2 slices of ginger
1/2 clove chopped garlic
some seaweed for garnishing - optional

Simple Process :

1. Put 2 litres of water to boil with the chicken thigh and ginger slices over medium heat for 30 minutes.
2. Remove the cooked chicken and set aside to peel the meat into strips
3. Add in the washed rice and allow it to boil for the next 30 minutes, keep stirring occasionally
till porridge looks starchy
4. Add salt to taste, add in the chicken strips
5. Serve with fried garlic and seaweed strips

Sweet Potatoes Peanut Porridge


Porridge is easy to cook and good to eat especially good for those recuperating from flu or for those who suffered from dehydration. Porridge is just boiling rice with lots of water, normally 1 cup rice to 5 cups water over medium fire and stirring occasionally. Sweet potatoes has rich source of nutrients and it gives the porridge a natural sweetness. To give the porridge an extra flavour, I have added the canned braised peanuts and it taste so yummy. My family loves this porridge especially with the "add on" braised peanuts. This meal is especially good for a hot afternoon.

This sweet potato which I have used is "orange" in color and it taste very sweet.






All you need :

Serve 4

  • a cup of rice
  • 3 pieces sweet potatoes
  • 2 tins of braised peanuts - optional

Simple Process :

Cook within 40 minutes

  • Wash the rice and boil it with 5 - 6 cups of water
  • Cut the sweet pototaes into small cubes or sizes, add into the porridge, add salt to taste
  • Boil the rice and sweet potatoes over medium heat for next 30 minutes, stirring occasionally to avoid burnt on bottom of pot

Optional - when porridge is Ready, just add in the braised peanuts...




Hmmmm....taste real good and healthy eating...

Golden Porridge

Look at the beautiful combination of colors in this bowl of porridge. It is a simple meal for a hot afternoon, easy to digest and fast to eat. This bowl of porridge is boiled with minced meat and garnished with 2 types of preserved duck eggs - salted egg in white and century egg in crystal brown....beautiful combination. To complement the taste, add a dash of pepper and sesame oil to the porridge.... Yep, a simple recipe with great taste!

Time to prepare : less than 40 minutes

What do you require: Serve 4

  • a cup of rice
  • 1 pc lean meat - minced
  • 2 salted eggs - cut into small cubes (obtainable from hypermart)
  • 2 century eggs - cut into small cubes (obtainable from hypermart)
  • salt, pepper to taste
  • some sesame oil
  • sprig of spring onions - for garnishing




(L)salted eggs and (R) century eggs

Simple Process :

  1. Wash the rice and boil with 1.5 litres of water over low heat, stirring occasionally to avoid burnt
  2. Minced the lean meat, mix with a little cornflour, salt, sesame oil, when rice is boiling, add in gradually the minced meat into the pot, and salt to taste
  3. When porridge starts to get starchy, it is almost ready, stir well and half close lid of pot to avoid porridge becoming sticky lump. Incase it gets too sticky, just add warm water to dilute it.
  4. Serve with some cubes of salted eggs and century eggs, garnish with chopped spring onion and a few drops of sesame oil

* If you like ginger, just add in the ginger strips



A simple meal for either breakfast or lunch!

Evergreen Porridge

This is yummy, looks good, taste good and why I called it Evergreen Porridge.....

My overgrown baby daughter...till today, called this meal "Baby Porridge"...hahahha. It is a porridge where Ee-poh (grandaunty) used to feed her when she was a baby.... so here goes the name for the porridge as it has no age barrier...Evergreen ma.....! It is not cognee so you cant really see the starchy stuff cos mummy prefer the watery form....so that's how it goes.

Simple and easy, just use the chopper and chop up the carrots, potatoes and spinach....drop it in the pot with the rice....done! Easy to cook and good nutritional values too... You see the brown thingy...that's dried oysters, it is optional...suit your taste. Can complement with 1/2 teaspoon Marmite too if dried oyster is excluded...

Time to cook : Less than 40 minutes


What do you require?

Cup of rice - serve 4
1 large carrot - chopped
2 potatoes - chopped
some spinach (bayam)
a piece chicken breast meat / lean meat
dried oysters - optional
thumbsize ginger
salt - to taste (less salt if you are putting in marmite)


What is next?

1. Boil 2 litres water drop in the big piece meat, chopped carrots, potatoes & optional dried oysters and ginger
2. Leave it to boil for 15 minutes, add in the rice and lower the fire, stirring constantly to
ensure no burnt rice for next 15 minutes
3. Lastly add in the spinach and constantly stir the porridge for another 5 minutes
4. It is done, ready to serve.

Tips:
**If you are not serving immediately, leave the pot cover half close to prevent the porridge from drying up.

Ah Mah's Porridge


The kids will be rushing off for tuition by 3pm Mummy need to ensure they have something easy and fast to swallow.......as it's gonna be a rush, rush affair today...
Something Fast To Cook and Yummy To Eat, will be great......yeah, let's go for Ah Mah's porridge that is FAST to Cook and Easy to Swallow......
Time Required : Less than 40 minutes..... You can do it too....try lah!


What are the Ingredients needed?
- a cup of rice (serve 4)
- a handful of dried prawns
- 2 pieces white taukua (a.k.a tau-kon) - cut into cubes
- chopped spring onions
- a MUST fried shallots (a.k.a yeow-chorng)
What's to do Next?
1. Fry taukua over medium fire till golden brown
2. Put 1.5litre of water to boil in a pot
While the water is put to boil......prep the below..
3. Fry the washed dried prawns with a little oil till nice aroma
4. Add in the washed rice and stir fry with the dried prawns
5. Add in light soya sauce, dash of pepper and stir thoroughly for 2-3 minutes
6. finally....put all into the boiling water in the pot over medium fire-
DO NOT cover the pot
7. Stir well every 10 minutes to ensure rice not sticking at the bottom of pot
8. Porridge should be ready when the rice grains are "open up"
9. Serve with the "green" and "brown" garnishing as shown in photo..
ENJOY YOUR MEAL....fast to cook and great to eat!
