Japanese Pancake - Okono miyaki

This is a yummy and simple to make japanese pancake, it caught my interest when I was browsing thru U-Tube recently and found it interesting...lazy mum wants something new to serve. I notice there are many versions of making this Japanese pancake and as usual, I sort for the most easiest and simplest form. No worries, I have tested it out and I find this recipe taste good with a slight modification on the amount of eggs.

So, here it is... this is what I have produced and the kids mumbled "Hmmm...Nice". I simply described it as Taste wonderful. Pancake is just make up of batter mixed with chopped cabbage and lots of chopped spring onions plus any ingredients of your wish. I have added in slices of crab sticks as my choice.

Well, eventhough the shape is kind of odd but nevertheless it taste good ^ _ ^ hahaha. A friend of mine shared the recipe of making the sauce especially for this Japanese pancake, it blends so well...can you see the brownish red sauce which has been spread ontop of the pancake?
All you need : Make 7 pieces - about 10cm diameter size

  • 1.5 cup plain flour or 22ogms flour
  • 500ml water
  • 6 eggs
  • salt to taste
  • 1/4 chopped cabbage
  • 6 stalks of chopped spring onions
  • 10 pc of crab stick

The Special Sauce for the Pancake

  • 3Tbs Worchestershire LP sauce
  • 3Tbs Tomato sauce
  • 2 Tbs light soy sauce
  • 2 Tsp sugar

Simple Process :

  1. Put those ingredients marked *red* in a bowl and make it into a smooth batter.
  2. Leave it for an hour in the refrigerator
  3. Add in the chopped vegetables into the batter
  4. Use a non stick pan with a little oil and start frying the pancake, about 1 cm thickness
  5. Add in the slices of crab stick on top
  6. Turn over once the bottom of the pancake starts to get browned
  7. Turn over again when pancake is slightly brown, next spread the special sauce on top of the crab stick surface, dish it out and serve hot

Look at my creation!!

I noticed the Japanese had it together with noodles, so I re-create it as below...hmmm, we like it and enjoyed a good meal!

Served with steamed hotdogs and baked beans....mmmm!!

Have an Enjoyable Meal! :))

Malaysian Pancake with Creamy Corn

Look at this easy-prep chinese pancake. I used to enjoy eating plain chinese pancake when I was a kid, my dad has a good set of skills making his signature pancakes... wow, those were the days..fond memories.

This is simple as ABC and it makes a good breakfast or for tea time, my kids love it. To add color and extra flavour, I have the creamy corn as topping. Toppings can be of individual preferences, sometimes I just dropped few slices of bananas on top....it taste great too! :))

This is how I fry the pancake using a ring mould on a non stick pan, no oil is required. It is fast to cook....looks simple yeah! If you have no rings, just go "free-hand", use a small ladel and drop the batter in the pan, it works too...

All you need : makes 15 pieces
  • 1 cup flour + 1.5 tsp bicarbonate soda
  • 1 cup milk
  • 3 large eggs
  • pinch of salt / sugar
  • 1.5 Tbs oil
  • 1 can of creamy corn or 4 ripe bananas ** your choice
Simple Process :
  • Mix all the ingredients together and turn into a batter
  • Refrigerate for 1 hour
  • Fry the pancake on non stick pan over low heat. No oil is required.
  • When bubbles start breaking on the surface, lightly lift up the ring and flip the pancake over for a few seconds and turn back to add toppings accordingly
  • Ready for serving

Have Fun and Enjoy.....

Pancake with Mushroom Chicken

I have been wanting to prepare this delicious pancake for quite sometime and finally I have it made. Well, though I didnt managed to get the crispy look pancake just as much as I wished, but it does not matter as I felt it still taste wonderful. The reason for the "non crisp" is because I have reduced the amount of bicarbonate soda to be used....oops! ran out of stock... issshh! Alternatively, you can use self raising flour.

We had a good meal - brunch - and everyone enjoys it, something for a change :) It is a simple recipe and fast to get it prepared. And...it is truly filling.

These are the ingredients for the mushroom chicken :
  • 2 pcs of chicken breast meat - cut into small cubes
  • 1 carrot - cut into small cubes
  • some button mushrooms - cut into small pieces
  • some frozen corns or peas
  • 1 big onions - cut into small pices
  • 3 pips of garlic
  • a packet of instant mushroom soup or 3 Tbs of canned mushroom soup (add 1/4 cup water)

All you need for the Pancake : Make 8 pieces

  • 100 gms flour or self raising flour (then no bicarbonate soda)
  • 2 tsp bicarbonate soda
  • 250 ml milk
  • 2 beaten eggs
  • 1 Tbs oil

Simple Process : Mushroom Chicken

1. Heat a little oil, saute the chopped garlic and onions till aromatic

2. Add in the chicken meat and stir fry till white, add the carrots, button mushrooms and corns

3. Stir fry all together for another 5 minutes, add in the mushroom soup mixture and allow it to simmer over low heat till gravy thickens

4. Dish out and next prepare the Pancake

Simple Process : Pancake

1. Mix the flour by pouring in slowly the milk and the beaten eggs

2. Mix it well till batter is smooth, add the oil in

3. Heat the pan and pour in the batter, making thin pieces of round pancake, take it out once it is golden brown

4. When pancake is ready, put some of the mushroom chicken onto the pancake and fold into quarter

5. Must Serve Immediately...

Enjoy Your Meal !
