Fusion Pasta in Soup


This is truly yummy and for a change, it is Pasta cooked in local style...yeah, another Fusion food - Pasta in Soup. It is nice to "re-create" for a change. I got this simple to cook recipe from my good buddy's sister many years back when I attended his Hari Raya Open House and infact I have lost the recipe note, so its a little bit of self creation...anyway it taste yummy, though it may not taste the same as the original recipe...hahaha. Anyway, I am very happy as all at home appreciates this great taste meal :))
I describe this beautiful dish as having a good blended taste of local spices and aromatic lemon grass and I sum it as real appetizing... WoW!
All you need : Serve 4
  1. 3 small bowls of pasta - boiled to soften, set aside

  2. 2 chicken breast meat - cut into cubes

  3. 2 Tomatoes - cut into cubes

  4. some cabbage - cut into small pieces

  5. some button mushroom - cut into slices

  6. 1 Tbs chilly paste

  7. 5 shallots & 1 thumbsize shrimp paste (belacan) - grind together

  8. 1 Tbs meat curry powder

  9. 3 lemon grass - use end 6cm length

  10. 1/2 bowl milk

  11. toasted bread cubes - optional


Simple Process :

  1. Heat the wok with a little oil and saute * ingredients in red * till aromatic, add in the chicken meat

  2. Add 1.5 litre of water and allow it to simmer over low heat

  3. Add in the cut cabbage, tomatoes and lemon grass, button mushrooms and allow it to boil till cabbage becomes soften

  4. Lastly add in the milk and ready to serve with the boiled pasta

Grandma Marcoroni Soup





Big and small members in the family love this clear and "non-oily" soup with pasta.....my mum used to cook this "chinese style" when we were kids especially during the time when I was recuperating from sorethroat and I love this simple dish till today. She called it "marcoroni soup". Hahaha...now my kids get to eat it...recipe inherited from Ah Mah. It's easy and fast to cook - truly no fuss to get it done. It takes less than 40 minutes....Get the soup boiling while you complete the other household chores. Wonderful isnt it.... Here it goes, Ah Mah's recipe goes like this....



What are the ingredients?

2 soup bowl full of pasta - Serve 3


1 piece chicken breast meat for soup


1/2 clove of garlic for soup


Cabbage and carrots - cut into pieces


Fish Roll - optional


1/2 clove Fried Garlic for garnishing - a MUST - it brings up the good taste of the soup



How to do it?


1. Boil the chicken breast meat and 1/2 clove garlic with about 1.5 litres water (3 mineral water bottles)


2. Add in cabbage and carrots 20 minutes later and boil for another 5-10 minutes till vege soften.


3. Boil the pasta till soft and ready to serve.


4. The "golden brown" stuff in the picture is fried garlic..it's a MUST to bring the beautiful taste to the soup. Btw, the "green stuff" is actually chopped lettuce.



It is just so simple to cook..........and healthy to eat!
