Grandma Marcoroni Soup





Big and small members in the family love this clear and "non-oily" soup with pasta.....my mum used to cook this "chinese style" when we were kids especially during the time when I was recuperating from sorethroat and I love this simple dish till today. She called it "marcoroni soup". Hahaha...now my kids get to eat it...recipe inherited from Ah Mah. It's easy and fast to cook - truly no fuss to get it done. It takes less than 40 minutes....Get the soup boiling while you complete the other household chores. Wonderful isnt it.... Here it goes, Ah Mah's recipe goes like this....



What are the ingredients?

2 soup bowl full of pasta - Serve 3


1 piece chicken breast meat for soup


1/2 clove of garlic for soup


Cabbage and carrots - cut into pieces


Fish Roll - optional


1/2 clove Fried Garlic for garnishing - a MUST - it brings up the good taste of the soup



How to do it?


1. Boil the chicken breast meat and 1/2 clove garlic with about 1.5 litres water (3 mineral water bottles)


2. Add in cabbage and carrots 20 minutes later and boil for another 5-10 minutes till vege soften.


3. Boil the pasta till soft and ready to serve.


4. The "golden brown" stuff in the picture is fried garlic..it's a MUST to bring the beautiful taste to the soup. Btw, the "green stuff" is actually chopped lettuce.



It is just so simple to cook..........and healthy to eat!
