Long Beans Yummy Rice

A simple and easy to cook "all in 1 pot" tasty rice ready to be served on a busy day or perfect for a lazy mum.... is the LongBeans Yummy Rice. I love the crunchy bites of the long beans plus the aromatic fried dried prawns and dried scallops, you will like too? Just add slices of chinese sausages (red) to enhance the color if you love chinese sausages (non-halal) - optional.

It is fast to cook and it takes less than 40 minutes to get this beautiful tasty pot of rice for the family...the kids would love it as it is "no-fuss" to eat, care to try?

Simple ingredients: Serve 4

  • a cup of rice
  • 8 long beans - cut into small pieces
  • some dried prawns
  • some dried scallops
  • a piece of chicken breast meat - cut into cubes
  • 5 shallots - chop
  • 2 chinese sausage - cut into thin slices (optional)
  • 2 Tbs light soya sauce
  • salt - to taste

Simple Process :

  1. Heat a little oil and stir fry the long beans till slightly soft. Set a side.
  2. Heat a little oil, fry the chopped shallots till aromatic, drop in the dried prawns and dried scallops, stir fry till aromatic, add the chicken meat and stir for 2 minutes..
  3. Add in the rice, drop in the light soya sauce and salt, stir fry till rice looks dry.
  4. Put all the mixture into the rice cooker, add required amount of hot boiling water and leave it to cook.
  5. When rice is cooked, add in the cooked long beans and mix well, ready to serve
  6. Garnish with fried shallots.

Simple and efficient - great taste too!


  1. i love to eat long bean rice but i never put scallops into it.Last time my sis told me to put some"siew yok" and it taste good but i never try it because i dont like to eat char siew/siew yok.Siew Lee

  2. Thanks Siew Lee for dropping by.. Yes, putting in additional ingredients are individual preference. Adding dried scallops adds natural sweetness to the rice..cheers

  3. Regret to cook 2cup of rice instead should put 5kg all in to serve for whole day-breakfast-lunch-dinner-supper...yummy yummy..hoe chai said ur recepi better than mine..adoi..
