Turmeric Fried Bittergourd

It is nice to indulge in fried stuff once a while and this is what Lazy Mum has come up with. It is a simple to prepare dish and taste great when eaten hot. Hmm...this is also one way to get our boys to enjoy eating bittergourd :)).

The bittergourd is first cut into slices and rubbed with salt, allow it to sit for a while, rinse and drained dry . This process is required to reduce the water content of the bittergourd. Lastly just coat the dried bittergourd with Hup Loong Wonder powder and some turmeric powder sprinkle on and fry it with some oil till bittergourd turns golden brown. Drained it and serve immediately!

Golden Pumpkin

We love pumpkin, do you? Pumpkin is very nutritious and we just love the good natural sweetness from it. My family enjoy having a "non-meat" dish once a while and I have this dish created with whatever I have in my fridge. Yeah, it is steamed pumpkin together with lightly fried "tau pau" or soft beancurd roll covered with gravy made from oyster and dark soy sauce and garnish with strips of black fungus aka woodear mushroom. A simple and easy to prepare dish for the family.

A short extract to share :

Health Benefits extracts from "HowStuffWorks"

The distinctive bright orange color of pumpkin clearly indicates that it's an excellent source of that all-important
antioxidant
beta-carotene. Research shows that people who eat a diet rich in beta-carotene are less likely to develop certain cancers than those who fail to include beta-carotene-rich foods in their diet. Pumpkin also has another carotenoid, beta-cryptoxanthin, which may decrease the risk of lung cancer in smokers.

1. Cut the pumpkin into thick slices and steam for 8mins (or till soften)
2. Cut the soft beancurd roll into pieces and lightly fried both sides

This is the packet of soft beancurd roll which I obtained from the vegetarian grocery stores

For the Gravy :
1. Heat a little oil in a pan and saute the chopped ginger till aromatic
2. Add in 1/4 cup water, 3 Tbs oyster sauce, 1 Tbs dark soy sauce
3. Optional - add in the slices of black fungus and bring it to a boil
4. To thicken the gravy, add 1 Tbs cornstarch

The seasoned beancurd wrapped with seaweed is labeled as vegetarian fish. I felt it's good to add vegetarian varieties on the dining table once a while. As usual for a lazy mum like me, I would go for something fast and simple to prepare. Kim Chiam is dried lily bud and obtainable from any grocery stores. It need to be soaked to soften prior to cooking. The soaked lily buds are stir fried together with the grounded fresh turmeric, onion and coriander leaves and add as a topping on the steam seaweed beancurd. I just love the freshness aroma of the turmeric and coriander....hmmm yummy and nutritious too!

  • a packet of the beancurd with seaweed (vegetarian fish)
  • 1 thumbsize fresh turmeric
  • 1 onion
  • 1 sprig of coriander leaves
  • 30gm dried lily bud (kim chiam) - soak till soften
  • salt to taste
Simple Process :
  • Steam for the beancurd for 5 minutes and set aside
  • Heat a little oil and saute the grounded ingredients - turmeric, onion, corriander leaves - till aromatic
  • Add in the soften lily bud, add some water, salt to taste and allow it to simmer for 5 minutes
  • Lastly, put the cooked toppings on the steamed beancurd
  • Ready to Serve
** You may add more water as the beancurd soaks up the gravy very fast

Vegetarian Steak-Green Peas

For a change, no meat for this post, let's go ve-ge-ta-rian..... I take a different approach to prepare this "mock" mutton, the norm which we find in vegetarian shops is Mutton Curry. Let me called it Vegetarian Steak...hahaha, does it look like "steak"? Not too worry, just a name to identify the dish...that's all!

Accordingly to the Nutrition Facts found in this frozen pack, these are actually mushroom stems, seasoned and processed and end results "become" Vegetarian Mutton.

Let's look at this simple to cook recipe and perhaps you may like it too as it has a good refreshing smell of the green peas (from the can)....oh so good to my sense of smell! I love it..

What do you require :
  • 1/2 pkt of frozen vegetarian mutton (obtainable from hypermart)
  • 2 onions - cut into rings
  • 1 can Green Peas
  • some oyster sauce
  • salt and sugar - to taste
Simple Process :
  1. Defrost the vegetarian mutton before cooking
  2. Heat a little oil and stir fry the vegetarian mutton for 2 minutes, dish out
  3. Next, heat a little oil and saute the onions till aromatic, add some water (as the gravy), the green peas, oyster sauce, salt and sugar to taste, let it simmer over low heat
  4. Let the green peas cooked slowly till it is soft and well soak into the gravy, finally, add in the the vegetarian mutton, stir well and ready to SERVE....eat with hot steam rice!

Have Varieties and enjoy a good meal!
