Tomato Fried Rice

Beautiful and colorful fried rice...yes, it is Tomato Fried Rice. Simple, easy to cook and a healthy meal. Good blend of savoury and sour flavour, hmmm....good for the appetite. This recipe comes from one our son, they love tomato ketchup and was giving me the idea of cooking fried rice with tomato ketchup and with added fresh tomatoes to give the Fried Rice a real tomato taste. Well, alright, it taste wonderful, good try! As always, wishes granted by Lazy Mum...
All you need : Serve 4
  • 1.5 cups of rice - to steam and leave aside to cool before using or just use overnight cooked rice
  • some prawns / shrimps
  • 1 pc chicken breast meat - cut into cubes
  • 3 Tomato - diced it
  • 10 pc French beans - cut into small pieces
  • 1 big onion - chopped
  • 3/4 cup tomato ketchup

Simple Process :

  1. Heat the wok with some oil and saute the chopped onions, add the chicken meat and prawns, stir fry till meat is cooked
  2. Add the french beans and give a few stir, add in the cooked rice
  3. Drop in the tomato ketchup, sprinkle of salt and give a good 10 minutes stir ensuring rice leaves no lumps and well absorbed with the tomato ketchup over medium heat
  4. Lastly add the diced tomatoes and stir mix well
  5. Ready to Serve
