Fish Maw Chicken Soup

This is one of my family favourite clear soup, it is Fish Maw Chicken Soup...yummy! Simple to cook and it is nutritious. The soup is very tasty as it has its original sweetness from the chicken, fishmaw, cabbages and carrots. I have added on abalone slices to make it more flavourful and it looks like a soup for the festive season - served during the Chinese Lunar New Year...wow!
Simply put all the below ingredients together in a pot of boiling water and cook it over slow fire to get the great tasty soup. Abalone slices will be added last when the soup is ready, boiling it too long will make it very tough.

All you need :
  • 2 pcs chicken breast meat or 2 big drumstick - chopped into pieces

  • some fish maw - soak and boiled before used

  • 1/4 cabbage

  • 2 carrots

  • 2 clove of garlic

  • some white peppercorns

  • salt to taste

  • abalone slices ** (optional)

Simple Process :

  • Boil 1.5 litre water and drop in the chicken, garlic, peppercorns, lower the heat to medium and let it boil for 25 mins

  • Add in the cabbage, carrots, fish maw and allow it to slow boil for the next 20 minutes

  • Add salt to taste and finally, add in the abalone slices and bring it to boil

  • Ready to serve

** Tips : To get a clear soup, always use slow fire to boil the soup
