Shrimp Fried Rice


Look at that, nice delicious Shrimps Fried Rice! Fried Rice is the most easy to prepare for a filling and complete meal for lunch or dinner. I have big and small shrimps in store, so this Fried Rice is simply made up of big, small shrimps, scrambled eggs (without milk version), chopped tomatoes and spring onions, garnished with slices of cucumbers. Simple isn't it? I normally steam the rice early in the morning, let it cool before turning it into fried rice.



All you need : Serve 4

  • 1.5 cups rice - can be cooked overnight or just steam it and allow it to cool before cooking
  • 200 gms small shelled shrimps
  • 16 big shrimps with shell
  • 2 eggs
  • 2 tomatoes - diced
  • 2 sprigs spring onions - chopped
  • 5 pips garlic + 1 big onion - chopped
  • 2 Tbs fish sauce
  • 1 Tbs dark soy sauce

Simple Process :

  1. Heat a little oil in wok and drop the eggs and quickly stir it up, just like making "scrambled eggs" - set aside

  2. Using the same wok, add some oil and saute the chopped garlic and big onion till aromatic

  3. Add all the shrimps and stir well till shrimps turn pink, add in the diced tomatoes, cooked rice

  4. Add the fish sauce, dark soy sauce and give it a good stir to ensure the sauces are evenly covered the white rice. Add salt to taste.

  5. Keep stirring for the next 10 minutes over low heat

  6. Lastly, dropped in the spring onion, cooked "scrambled eggs" and give a finally stir

Enjoy a Good Meal of Fried Rice!
