Greens Croissant

Being Asian we eat mostly rice or noodles most of the time and as for today it is going to be something light. Yep, something fast, simple to prepare and healthy, ah ah, that's Lazy Mum... Got this fresh croissant from the bakery and decided to have vegetable filling by simply frying the shredded yam bean and carrots with dried shrimps or you can use fresh shrimps chopped into pieces, yeah, it is a nice wonderful vegetables filling, kind of fusion...hahaha.. No Tuna, No Egg Mayo to go with...

All you need for the filling : for 6 croissants
  • 1 yam bean (bangkuang) - shredded
  • 2 carrots - shredded
  • some dried shrimps or some chopped fresh shrimps
  • 1 big onion - chopped
  • salt to taste
  • some green lettuce to garnish

Simple Process :

  1. Heat the wok with a little oil, saute the chopped onion and dried shrimps till aromatic
  2. Add in the shredded yam bean and carrots and stir mix, add salt to taste
  3. Add some water, simmer over medium heat and cook for next 20 minutes till most of the water has been absorbed and keep it a little moist.
Just fill the croissant with the fried vegetable........Beautiful!

Have a Healthy n Enjoyable Meal!
