Seaweed Anchovis Fried Rice

Wow...this Fried Rice really taste good, if you like fried baby anchovis (baby ikan billis). I just love fried rice as it is can be easily "transformed". All you need is to acquire the skill of frying rice and there you are... a simple and easy home cook meal for lunch or dinner. My kids say "yum! yum!"



Look simple but smell great! Japanese Seaweed is nutritious...

Flower Bun

Look at this beautifully twisted HOME MADE flower bun and look at its glow. Yeah! Good work ... :)) This is a contribution from my hubby. It taste wonderful and goes so well with curry chicken. Looks simple, but taste great.


All you need :

300 gms of plain flour
40 gms sugar
1/2 tsp salt
1.5 tsp instant yeast
150ml warm water
2 Tbs shortening

The Process :

  • Sieve flour into large bowl and add salt
  • Mix warm water, sugar and instant yeast together in a bowl and rest for 5 mins
  • Next pour the mixture into the flour and mix it together
  • Add in the shortening and start to knead till it becomes a non stick dough
  • Next, rest the dough for 1 hour to double the size, cover with a cloth
  • Once the dough has doubled, re-knead it for 10 minutes
  • Leave it to rest for 10 - 15 minutes, cover with a cloth
  • Next, roll the dough and cut it into required size, flatten it into a rectangular shape
  • Prepare Ingredient 2 for applying on the rectangular dough
Ingredient 2 - 2 tbs shortening, 1 tbs sugar and mix well. Use this mixture to apply on
the flatten rectangular dough before "twisting" it into bun like.

Before steaming... the dough is resting..

  • After "twisting" the dough just like above photo, rest it for 10 minutes before steaming for 15 minutes.
Phuhyo....what a long process....hahahaha!
But it taste so nice, soft and tender, it is worth his effort after all!

Dried Wan Ton Noodle with Siew Yoke (Roasted Pork)

Wow, look at Lazy Mum's "fast food" for the family :)) - No, it is not Instant Noodle but it's Wan Ton Noodle, fresh from the market. It is simple and fast to prepare. Yah, it is Dried style wan-ton noodle served with "ready-made" roasted pork or siew yoke (bought from the market place). Dried Wan Ton noodle is easy to prepare, just blanched the noodle in boiling water, drained, then just mixed it with a little sesame oil, dark and light soy sauce. Just garnish with blanched nice green bayam or spinach, add on with the pieces of roasted pork.

Just another idea of serving a simple and wonderful meal for the family.

Aromatic Spicy Seaweed Beancurd

I just love the beautiful aroma of curry leaves and gave this dish a boost in flavour by frying it together with the chilly paste. This is lazy mum's newly created dish for the family labelled as Aromatic Spicy Seaweed Beancurd, simple to prepare and taste good! My kids love seaweed beancurd and this is one way of preparing a delicious dish for them. See the rich beautiful color of the chilly paste which has been well coated on the lightly fried beancurd.


All you need :

  • a packet of seaweed beancurd
  • 5 red chilly
  • 1 Tbs grounded dried chilly
  • 1 big onion
  • thumbsize young ginger - cut into small cubes
  • 3 sprig curry leaves
  • 1 tsp dark soy sauce
  • some sugar + salt to taste

Simple Process :
1. Grind the red chilly and onion together and add the grounded dried chilly paste
2. Heat a little oil in the pan and lightly fry the seaweed beancurd till brown, set aside
3. Heat a little oil in the pan and saute the young ginger cubes for a minute before adding in the grounded chilly paste together with the curry leaves
4. Saute the ingredients till fragrant, add 3 Tbs of water, 1 tsp dark soy sauce, add sugar and salt to taste
5. Lastly, put in the lightly fried seaweed beancurd and coat well
6. Serve hot with steamed rice

Sui Kow Soup

We all love this simple soup meal and Lazy Mum is all set for it. Yes, this is Dumpling Soup or Sui Kow Soup. It is rather filling, I filled each bowl with 6 pieces and it makes a complete lunch for each of us... :)) Easy and healthy eating for the day. It is fast to prepare and great to eat!

The soup is made of anchovies which I have lightly stir fry with ginger before boiling it with water.

The filling for the dumpling is the same as Siu Mai - Dumpling, my earlier post, just click to check. Steam the dumpling for 10 mins before putting it into the boiling soup, bring to a quick boil and ready to serve.

Turmeric Fried Bittergourd

It is nice to indulge in fried stuff once a while and this is what Lazy Mum has come up with. It is a simple to prepare dish and taste great when eaten hot. Hmm...this is also one way to get our boys to enjoy eating bittergourd :)).

The bittergourd is first cut into slices and rubbed with salt, allow it to sit for a while, rinse and drained dry . This process is required to reduce the water content of the bittergourd. Lastly just coat the dried bittergourd with Hup Loong Wonder powder and some turmeric powder sprinkle on and fry it with some oil till bittergourd turns golden brown. Drained it and serve immediately!

Stir Fry Dried Noodle


A delicious lazy mum stir fry dried noodle with shrimps and fishpaste strip. It is simple and easy to prepare and within 20 minutes the meal is served....Voila! Since it is so easy to prepare, so there is always a good reason to stay home for a healthy and MSG free meal. Yes, eat healthy! I find that dried noodles taste better than fresh noodles except we need to blanched it before stir frying.

Let's look at the simple way of preparing this meal....

All you need :
  • a packet of the dried noodle
  • a clove of garlic - chopped
  • some prawns and fish paste strips or fish ball
  • some green leafy vegetables
  • 1 Tbs oyster sauce
  • 1 Tbs light soy sauce
Simple Process :
1. Blanch the dried noodle till slightly soft before stir frying
2. Heat some oil and saute the garlic and add the prawns and fish paste strips
3. Stir fry till prawns turns pink, add in the green leafy vegetables and a little water
4. Add in the blanch noodle, oyster sauce, soy sauce, close the lid of the wok for 2 mins
5. Stir fry till noodle turns dry and fully absorbed all the gravy
6. Serve hot

CKE Sushi


We had a happy and wonderful weekend at our residence. The house were filled with hefty laughters, little girls mischieviously running around with their young uncles (my boys) and screaming with joy, music filling the background and smoke from the BBQ set in the garden, yah it's a mini barbeque party.

My lovely niece came over to prepare her 1st time ever sushi-making and it turns out beautifully done and taste real good too....not bad eh for a 1st timer! Well done CKE...the sushi rice taste real good! It's very encouraging to hear from her two little cuties "hmmm..mummy it is nice" and needless to say, my big boys and girls were busy helping themselves and enjoying every mouthful... :)) so do I..oops! I never knew it was so easy to make until I saw her doing it.... so proud of her and here is her recipe to share.... thanks to my niece for sharing. We can now enjoy a clean and hygienic sushis at home.



All you need : To Make the Rice : 2 cups rice + 1 cup of glutinous rice (pulut), 100ml rice vinegar, 100ml sugar

Simple Process
:
1. Boil the rice and allow it to cool, then mixed it with the boiled vinegar and sugar Next...just add your choices of topping or add your choice of ingredients and roll it up with seaweed

Fried Rice with Barbeque Meat

A colorful and flavorful chinese style fried rice aka Yong Chow Fried Rice. Lazy Mum enjoy cooking this super delicious and easy to prepare meal for the family ^_^ The BBQ meat aka "char siew" is being coated with edible red coloring prior to barbeque, thus it gives a nice reddish color to the fried rice....Beautiful right? The BBQ meat is easily obtainable from the chicken rice shop.


All you need : Serve 4
  • 1.5 cups rice - cooked overnight
  • 1 clove of garlic - chopped
  • 1 big piece of barbeque meat - cut into small cubes
  • 200gm small prawns
  • 2 chinese sausages - cut into thin slices
  • 2 eggs - stir fried and set aside for garnishing
  • 1 sprig of spring onion
Simple Process :

1. Heat the wok with some oil and saute the chopped garlic till fragant
2. Add in the prawns and stir fry till it becomes pink, add in the chinese sausage and bbq meat
3. Stir fry and mix the ingredients, put in the rice, add a few drops of sesame seed oil and stir fry to ensure the rice is clear of lumps
4. Add salt to taste, when the rice is already well mixed with the ingredients and clear of lumps, drop in the fried eggs and mix well
5. Garnished with chopped spring onions and ready to serve

French Bean in Oyster Sauce

Look at this beautiful fresh green french beans which Lazy Mum have it simply stir fry with lots of garlic and oyster sauce. Yummy, it is crunchy and taste simply delicious. This green green french beans was purchased from beautiful cool Cameron Highlands, and it is real fresh and taste sweet with just a simple way of serving it... :))


Simple Process :
1. Heat the wok with a little oil and saute the chopped garlic till fragrant
2. Add in the carrot and french beans and give it a good stir
3. Add 2 Tbs of oyster sauce, a sprinkle of water to keep the wok moist
4. Close the wok lid for 1 min and give it a final stir
5. Ready to serve - crunchy n delicious
