Onion Chicken


Here is Lazy Mum simple and easy to cook delicious and aromatic Chicken dish. Yes, it's a yummy yummy aromatic dish, thanks to the great onion. A simple dish using onion as the main ingredient to give the great taste to the chicken and it's yummy gravy. My family enjoy this dish with hot steamed rice. To add color, garnish with spring onion when the dish is ready to serve.

All you need :
  • half chicken - chopped into pieces
  • 2 onions - cut into wedge
  • 1 sprig spring onion
  • 2 Tbs dark soy sauce



Simple Process :

1. Heat the wok with a little oil and saute the onion till aromatic
2. Add in the chicken and stir fry till chicken turns white
3. Add 1/4 cup water, 2 Tbs dark soy sauce and simmer the chicken over low heat for the next 25 minutes
4. When chicken is cooked, add the spring onion and give a quick stir, dish out and serve hot

Yumi Bread Pudding


What to do with so many leftover bread **???..oh yeah, another recycle piece... here comes lazy mum quick to make bread pudding for an afternoon teabreak. It's yummy and good to eat. Simple and nice :))


All you need :
6 to 7 slices bread - spread butter on it
2 eggs
200 ml milk
2 Tbs sugar
some raisins

Simple Process:
1. Cut the slices of bread and lay it on baking plate
2. Sprinkle the raisins all over the bread
3. Whisk the eggs with sugar and add milk
4. Pour the mixture onto the bread, soak it well
4. Sprinkle sugar on top
5. Bake it at 200 degC for 20mins or till brown

Golden Pumpkin

We love pumpkin, do you? Pumpkin is very nutritious and we just love the good natural sweetness from it. My family enjoy having a "non-meat" dish once a while and I have this dish created with whatever I have in my fridge. Yeah, it is steamed pumpkin together with lightly fried "tau pau" or soft beancurd roll covered with gravy made from oyster and dark soy sauce and garnish with strips of black fungus aka woodear mushroom. A simple and easy to prepare dish for the family.

1. Cut the pumpkin into thick slices and steam for 8mins (or till soften)
2. Cut the soft beancurd roll into pieces and lightly fried both sides


This is the packet of soft beancurd roll which I obtained from the vegetarian grocery stores


For the Gravy :
1. Heat a little oil in a pan and saute the chopped ginger till aromatic
2. Add in 1/4 cup water, 3 Tbs oyster sauce, 1 Tbs dark soy sauce
3. Optional - add in the slices of black fungus and bring it to a boil
4. To thicken the gravy, add 1 Tbs cornstarch

PoPiah - Chinese Spring Rolls

Look at this yummy chinese spring roll aka popiah (chinese dialect) which I have prepared for my family. We had a wonderful time preparing the popiah together and it's fun....yah, cooking with passion. I strongly believe that if we cook with passion, the end results are sure great! It was a dream come true as we longed to taste my hometown popiah for a long, long time and it was wonderful that I finally managed to get the spring roll skin (made from rice flour) from a stall. Different states in the country makes different filling for the spring roll but I just missed my mum's simple and delicious recipe..... It is easy to prepare and taste so good!


The main filling consist of shredded yam bean aka bangkuang stir fry with garlic and prawns, fried bean curd cut into fine pieces. Never miss putting the fried shallots before rolling up the spring roll, it gives a great booster to the taste. Spread some sweet sauce, chilly paste on top of the spring roll skin, put a piece of green lettuce, 1 spoonful of the cooked yambean with prawns, fried beancurd, fried shallots and just roll it up! To serve, just cut it into half or smaller pieces.... ** Optional - crab meat can be added too.



Voila!...... a yummy tasty Chinese Spring Roll also known as "PoPiah"

Double Delight


Here comes a combination of cauliflower and broccoli in a plate where kids would sure love the great taste - yep fried stuff...where kids cannot resist, goes the same to my big boys and girl at home. It is an extremely simple dish to prepare, no fuss at all and an added variety in the menu for the family. It is not spicy and has great flavor...

I got this wonder powder from my SIL and found it wonderful to use for coating vegetables like cauliflower, abalone mushroom and bittergourd, to name a few. I have added turmeric powder and a sprinkle of curry powder to make the fried cauliflower and broccoli more flavorful..

Simple Process : Just add some water to this wonder powder together with 1 Tbs of turmeric powder and 1 tsp of curry powder and make it into a batter. Coat the cut cauliflower and broccoli with the batter and fry it till golden brown on a non stick pan...Serve immediately.

Dry Curry Vegetarian Fish


Here comes an aromatic dry curry vegetarian fish. We just love eating vegetarian fish which is made of beancurd and wrap with seaweed. It is healthy to eat and also an added variety to the meals served. A simple and fast to prepare dish for the family and good for lazy mum like me. A little spicy though and very appetizing to go with steam white rice. The most essential ingredients for this dry curry is the curry leaves which gives a wonderful aroma to the dish.


Aromatic Curry Leaves


All you need : A piece of the vegetarian fish (made of beancurd wrapped with seaweed), a small packet of the fish curry powder, 2 onions, 2 sprigs of curry leaves, 2 tomatoes, 5 ladies fingers.

Simple Process : Mixed the curry powder with the blended onion. Saute the curry paste together with curry leaves till aromatic, add 1/2 bowl water, salt, a little sugar to taste. Add in the cut tomatoes, ladies fingers, cut onion rings and allow it to simmer till ladies fingers has soften. Pour it over the lightly fried vegetarian fish.


Wow....An appetizing dish, Fast to cook n Delicious to Eat!!

Nyonya Lam Mee (Noodle)

I considered myself as one of those lucky ones to have learnt from my mum on how to prepare Nyonya Lam Mee . Lam Mee literally means "pour soup over the noodle". This special dish is normally served during a birthday celebration for the elders. Long long time ago, we only get to eat this Lam Mee during our grandmother's or grandfather's birthday. The noodle will be served in a gigantic enamel plate and beautifully garnished with red coloring strips of egg omelette. Red is considered important for an auspicious occasion like birthday celebration.
My kids are much lucky as they now get to taste this noodle as and when they feel like eating as mummy can accord to their request
. :))

Nyonya Lam Mee has to be eaten with Sambal Belacan in order to boost the wonderful taste of soup. So with the added Sambal Belacan (Chilly pounded with roasted shrimp paste n lime juice), this is how beautiful the bowl of noodle appears to be....


This "flat fish" is one of the most important ingredient to be added to the soup as it gives the soup it's unique taste. It is boiled together with pork belly or chicken and prawns to make the tasty soup for the noodle.




All you need to make the soup are :
  • 1/2 chicken or 2 pcs of pork belly
  • 1 kg medium size prawns -boiled and use the water to add to the meat stock
  • 1 piece "flat fish"
  • 2 litres of water
Garnishing for the Noodle :
  • 5 beaten eggs to make omelette - then slice it finely
  • cooked prawns - cut into small pieces
  • cooked meat - cut into small pieces
  • fried shallots
  • chopped spring onions or blanched chives
Simple Process :
  • Lightly pan fried the flat fish before putting into the water to boil with the meat over medium heat for at least an hour
  • Add the boiled prawn water into the meat stock to give it a rich taste
  • Get those ingredients for garnishing on standby
  • Blanched the noodle or vermicelli and just pour the soup on top of it
  • Ready to serve with the toppings..

Roasted Chicken in Pita


A day for Lazy Mum to relax and no wokking at the kitchen. Yeah, going for a fast, simple and a healthy meal for lunch. We love Pita or "pocket bread" and it's stuffed pita with roasted chicken for a change, something savoury. Wow... simple and fast to prepare, I just love it. A complete healthy meal......complement with a bowl of pumpkin soup..Voila!
Simply cut the pita bread into half and stuff with roasted chicken (hand tear into pieces) and add slices of cucumber or lettuce.... Simple isnt it?

Sweety Shrimp Roll

My big boys and girl just love this vegetarian shrimp roll and lazy mum surely enjoy cooking it as it is so simple and fast to prepare... yeah :)) Little kids would love it too, as it ain't spicy and it has a bit of sweet-sour savoury flavour, goes well with steamed rice. This vegetarian shrimp roll is obtainable from the hypermarket and it is basically made up of beancurd skin wrapped with strips of carrot and yam bean (bangkuang). Yes, eat healthy! It is very simple to prepare as it is just cooking a simple sauce and pour it over the lightly fried roll. Yum! Yum! Dish is ready within 20 minutes.

All you Need :

  • a packet of the vegetarian shrimp roll
  • 2 onions - cut into wedges
  • 2 Tbs oyster sauce
  • 3 Tbs plum sauce
  • 1/2 cup water

Simple Process :

  • Heat the pan with a little oil and lightly fried the shrimp roll - dish out and drain
  • Heat the pan with a little oil and saute the onion wedges till aromatic, add in 1/2 cup water
  • Add in the sauces and allow it to simmer till thicken slightly
  • Pour sauce over the shrimp roll and garnish with tomatoes
  • Ready to Serve

Home Made Tortillas

A beautiful and taste good home made tortillas. Yes, it is easy and simple to prepare, we just love it very much. Since I got this recipe from the website allrecipes.com, I have been making tortillas at home, voila! And the most beautiful thing is we can have different fillings of our choice. I just love the home made tortillas as it taste rich and soft unlike the packed ones.

The simple recipe to make tortillas are 1.3/4 cup flour, 1/4 tsp baking powder, 4 Tbs vegetable oil, pinch of salt and 1/2 cup hot water. Just knead into a dough and set aside for 15 mins before cutting into small rounds and rolling it flat to make pieces of tortilla. Heat the pan (no need oil) and brown both side of the dough. Here you are : Home Made Tortilla!

As for the filling, it is a mixture of :
  • chopped spinach - blanched it over boiling water
  • baby tomatoes
  • tuna chunks
  • slice of cheese

Just baked the tortilla with the filling for 20 mins at 200 C and it taste so yummy with the melted cheese! What I have learnt, baked tortillas with fillings are called "burrito" (mexican)........ Wow! It is good to eat and a wonderful discovery...

Golden Seaweed Beancurd

Look at this beautiful and colorful dish, yes it comes with a good flavour too. I have created this flavourful dish called Golden Seaweed Beancurd. The seasoned beancurd wrapped with seaweed is labeled as vegetarian fish. I felt it's good to add vegetarian varieties on the dining table once a while. As usual for a lazy mum like me, I would go for something fast and simple to prepare. Kim Chiam is dried lily bud and obtainable from any grocery stores. It need to be soaked to soften prior to cooking. The soaked lily buds are stir fried together with the grounded fresh turmeric, onion and coriander leaves and add as a topping on the steam seaweed beancurd. I just love the freshness aroma of the turmeric and coriander....hmmm yummy and nutritious too!

All you need :

  • a packet of the beancurd with seaweed (vegetarian fish)
  • 1 thumbsize fresh turmeric
  • 1 onion
  • 1 sprig of coriander leaves
  • 30gm dried lily bud (kim chiam) - soak till soften
  • salt to taste
Simple Process :
  • Steam for the beancurd for 5 minutes and set aside
  • Heat a little oil and saute the grounded ingredients - turmeric, onion, corriander leaves - till aromatic
  • Add in the soften lily bud, add some water, salt to taste and allow it to simmer for 5 minutes
  • Lastly, put the cooked toppings on the steamed beancurd
  • Ready to Serve
** You may add more water as the beancurd soaks up the gravy very fast
