This is my new creation for fried "shorty" rice noodle aka loh si fun and my family love it - it's jolly good to eat! :)) It is simple to prepare and fast to cook, served within 20 minutes. I have it fried with cut pieces of dried chilly, chicken meat, cabbage with dark soy sauce and garnish with fried baby anchovis..... It is not spicy hot but just to add a nice aroma from the dried chilly. The fried baby anchovis gives an added flavour to the noodle!
All you need : Serve 3
- a packet of rice short noodle (loh si fun)
- a piece of chicken breast meat - cut into cubes
- some cabbages - cut into strips
- 4 pcs of dried chilly - cut into 2 - 3 cm in length
- 1 clove garlic - chopped
- handful of baby anchovis
- 1 sprig of spring onion - chopped
- fish sauce n dark soy sauce
Baby Anchovis - wash, drain dry and fry till crispy
Simple Process :
- Wash, drain dry baby anchovis before frying it till golden brown, set aside for garnishing
- Heat the wok with a little oil and saute the dried chilly for 2 minutes, add in the chopped garlic and saute till aromatic
- Add in the chicken and stir fry till fairly cooked, add cabbage and stir fry
- Next, add the rice noodle and a few drops of dark soy sauce and fish sauce in it, stir to mix evenly
- Keep stirring well for next 5 minutes and dish out
- Ready to serve, garnish with the fried baby anchovis and chopped spring onions

I like noodle esp. loh shi fun. Looks delicious. Would it be better if we were to cook it in claypot?
ReplyDeleteHi Sathira...that's a brilliant idea, cooking in a claypot. I believe it would taste much better as claypot can keep the noodle warm.
