The purpose of the half boiled egg is to enrich and smoothen the blanched spinach noodle. Spinach noodle comes in a dried pack and easily obtainable from hypermarket or the grocery stores.
Simple Process :
1. Stir fry the minced meat with some chopped onions adding light soy sauce, oyster sauce to give it a good flavour, set aside
2. Prepare the half boiled eggs and set aside
3. Soak the japanese sea spinach to soften it, no cooking is required
4. Just blanched the dried spinach noodle, garnish it with the half boiled eggs, cooked
minced meat, japanese sea spinach, add 1 Tbs crispy chilly anchovis and serve
This is how the plate of noodle looks like when it is all mixed before eating....so rich and delicious!
