Yummy Baked Chicken

Lazy Mum with her yummy baked chicken. Simple, fast and no fuss to prepare. Just marinate the chicken drumsticks and allow it to sit in the refrigerator for about 3 hours and then allow the oven to do the cooking...Voila! A yummy set meal.

The ingredients that I have used to marinate the chicken to produce a yummy well blended savoury taste are : CHOPPED GARLIC, CHOPPED FRESH CORIANDER, TUMERIC POWDER, OYSTER SAUCE and SALT. Generously rubbed on the surface of the chicken drumsticks (make 2 slits on the surface of the drumstick) and allow it to marinate for 3 hours before baking for 50mins at 250 deg C.


I have laid some cut carrots on the baking tray and arranged the marinated drumsticks on top, cover the top with an aluminum foil and remove the foil after 30 mins of baking and continue to bake for another 20 mins. This is to prevent too much moisture lost from the chicken and also to get a nice roast. Served with fresh cucumber and lettuce and lightly baked sausages. No Fuss and nutritious! Enjoy..

Croissant with Chicken Ham

Lazy Mum with yummy bites for lunch today...simple, easy, fast to prepare and most of all nutritious. Bought the ready made croissants from the bakery and DIY a simple meal for lunch. Look at those beautifully rings of onion lying on top of the chicken ham coupled with lettuce and slices of tomatoes and compliments with drops of thousand island sauce....wow, the big boys simply loves it...Yum! Yum!

Batik Agar Agar (Jelly)


Lazy mum's sweet memories jelly dessert. It is known as "batik agar-agar" as it is adopted from
the art and craft technique of dyeing fabric with mixtures of well blended colors. A creative way of designing the fabric and it is classic. Batik made into clothing for men and women are largely used as an official function attire in Malaysia.

Easy and simple to make. Making this jelly or
agar agar in bahasa malaysia brings back sweet memories of my home science class at school during our lower secondary years....wow, those were the days....

Simple steps :

First boil 20gms of agar-agar strips with 1.5 cups of water till the agar-agar is completely dissolved.
Add 1 box (200ml) of the coconut milk and mix well. Pour the mixture into a tray and allow it to set. When the agar-agar has set, just cut it into small shape of your choice. Set aside


Next, melt 50gms of gula melaka (palm sugar) in a saucepan over a low heat till it completely becomes liquid.

Then, boil 1 packet of 37.5gm agar-agar strips with 4 cups water. To give it a beautiful aroma, add 3 pieces of screwpine leaves (pandan leaves) when boiling the agar-agar.. Ensure the agar-agar is completely dissolved, then add in the melted gula melaka and stir well to mix. Pour the agar-agar into a tray and allow it to slightly set for 10 mins.


After 10 minutes of setting time, drop the cut pieces of coconut milk agar agar, just like the
photo below. Once that is done, allow it to completely set, chill it before cutting.

Fish Porridge

Here comes lazy mum delicious warm bowl of fried fish porridge for the family, fast , easy to prepare and good to eat.....yummy! Yes it is nice to have soft diet once a while. The porridge taste great with lots of fried chopped garlic and chopped fresh coriander.

Simply go through this process and enjoy a delicious home cooked porridge with no MSG...

Serve 4 person : 1.5 cup rice, 1 medium size fish

1. First have a medium size fish of your choice, cut into pieces, drain dry, rub a little salt on the surface and fry it till golden brown. Set aside

2. Steam the rice or cook it in the rice cooker with slightly extra water to get a soft texture

3. Scoop the cooked rice into a pot, add water about double the amount of the cooked rice and bring it to boil over medium heat till the rice grain looks "open up". It will take about 10-15 minutes
of boiling time depending on how soft the cooked rice is.

4. Add in some salt and the fried fish cutlets and allow it to boil for 5 minutes. Scoop it into bowl to serve and garnish with fried garlic and chopped coriander or alternatively spring onion and a dash of pepper

Sarawak Laksa

Yummy, yummy Sarawak Laksa. Simply delicious and it taste so good..just love it. It has a nice blended flavor of assam laksa and curry laksa. The hot steaming soup whets ones appetite.

With the ready to cook Laksa paste from Sarawak, this bowl of laksa can be easily prepared within an hour and ready to be served. If you do not have the paste then you need to gather these ingredients and get it blended - garlic, shallots, galangal, dried chilly, lemon grass, belacan and add tamarind juice, pounded groundnuts and coconut milk.


All I need to do is to boil the chicken and prawn stock and add in the paste and blend it with coconut milk and evaporated milk to smoothen the taste. Lime juice can be added to boost the aroma of the soup. Then garnished the bowl of noodle with shredded chicken, prawns, shredded omellette, cucumber and beansprout plus chopped corriander....... Wow truly Nice!

Yam Beehoon (Vermicelli) Soup

A yummy soup meal prepared by lazy mum for the family. This is Yam soup with Beehoon (vermicelli), garnished with fried shallots, spring onion and strips of omelette. A very easy and simple dish to prepare with little fuss. I have used the thick vermicelli that needs soaking for about an hour before blanching, alternatively you may used the thinner version for this dish too.

The base of the soup is made up of dried prawns and yam pieces. See the photo below.
This tuber root plant is obtainable from the fresh market. It's skin is rough and a bit hairy and the inner layer is a little slimmy. Just put under the running tap water to rid the slimmy feel before cutting into pieces.


To prepare soup : Serve 4 person

1 small yam - cut into pieces
50gm dried prawns
some shredded ginger
salt & pepper to taste

1. Heat a little oil and saute the shredded ginger and dried prawns till aromatic, add 1.5 litre water and allow it to simmer over medium heat for the next 20 minutes. Add the yam slices to allow it to soften. Add salt to taste.
2. The soup is ready once the yam has soften.

Next....

1. Blanched the soaked vermicelli till it is soften
2. Serve the blanched vermicelli in a bowl, pour the hot yam soup over it
3. Garnished with spring onion, fried shallots and omellette strips
4. A dash of pepper would taste good

Chicken Porridge - Congee

Lazy mum presenting a simple and easy to prepare meal, chicken porridge. I just love to cook porridge simply because it is easy to prepare and nice to eat. I have garnished this chicken porridge with strips of roasted seaweed and fried chopped garlic.

All you need : Serve 4

1 big piece of chicken thigh
1.5 cup rice
2 slices of ginger
1/2 clove chopped garlic
some seaweed for garnishing - optional

Simple Process :

1. Put 2 litres of water to boil with the chicken thigh and ginger slices over medium heat for 30 minutes.
2. Remove the cooked chicken and set aside to peel the meat into strips
3. Add in the washed rice and allow it to boil for the next 30 minutes, keep stirring occasionally
till porridge looks starchy
4. Add salt to taste, add in the chicken strips
5. Serve with fried garlic and seaweed strips

Black Pepper Onion Chicken

A simple and easy to prepare lazy mum's version of black pepper onion chicken. It turns out yummy! The wonderful aroma from the green chillies and onion really makes this dish mouth-watering. The dish looks pale as i have omitted the dark soy sauce as my son is trying to avoid taking dark soy sauce due to a fresh scar on his face. Well, color can be deceiving, it taste just as good, anyway. Try it * v *

What you need :

  • 1 piece of chicken breast meat - cut into small think slices
  • 2 big onions - cut into slices
  • 2 green chilly - cut into slices
  • grounded black pepper - amount is your choice
  • 1 Tbs cornflour
  • 1 Tbs oyster sauce
  • 1 Tbs dark soy sauce
  • 1 Tbs chinese cooking wine
  • salt to taste

Simple Process :

  • Marinate the chicken meat with the cornflour, oyster sauce, dark soy sauce and cooking wine for 30 minutes before cooking
  • Heat the oil in the pan, saute the onion and green chilly till aromatic
  • Add in the marinated chicken meat and stir fry till chicken meat turns white, sprinkle the grounded black pepper and mix well
  • Add a little water, lower the heat, and allow the chicken to simmer till cook
  • Ready to serve within 20 minutes of cooking time.

Baked Salted Herbal Chicken


Look at this delicious baked chicken. Yes, it is simple and easy to prepare especially for those who enjoy no fuss cooking and short preparation time. All you need to do is just clean and drain dry the chicken, rub it with salt all over and let the chicken sit on some fine gingseng roots or alternatively I do use "tangkwei" (another blood nourishing herbs), sometimes. Then, wrap it up well with tin foil or baking paper.

Heat the oven at 250 degrees celsius and baked the wrapped chicken for 45 minutes.....that's it!

When it is cooked, you get to smell the beautiful aroma of the herbal chicken.

I have it served as a set meal for the family. I served it with Garlic Fried Rice...Look at this.... :))

Spore Fried Bihun

Here comes a simple and easy to cook fried vermicelli or "bihun". Ermm, some named it Singapore Fried Bihun and how the name came about, I am not too sure... Anyway, my kids labelled it as Tomato Sauce fried bihun... * v *

Simple Ingredients : serve 4

  • 1/2 packet of bihun - soaked in water for about 15 mins to soften
  • some shredded carrots
  • 1 cup beansprout
  • 2 big red onions - cut into half ring
  • 2 pieces beancurd
  • 200gms shelled prawns
sauce ingredients : 2 Tbs curry powder + 4 Tbs tomato sauce + 1 Tbs fish sauce, add with 1/2 cup water

Simple Process :
1. Heat the wok with some oil and fry the cut pieces of beancurd till golden brown, dish out
2. Heat the wok with some oil and saute the cut onion till aromatic, add in the prawns and stir fry for 1 minute.
3. Add in the soaked bihun and the sauce ingredients, add 1/2 cup of water and stir to mix well with the sauce, lower the fire and close the lid of wok for 5 mins
4. Add in the beansprout, shredded carrots, fried beancurd and mix well with the bihun, stir fry for 4 - 5 mins
5. Ready to serve and garnish with chopped parsely. You may squeeze in the lime juice to boost the flavour.

Kampung Fried Rice



Hi there... here I am... Thank you so much for continuously visiting my Blog and a special thanks to Amy B for your encouraging words... Wow, it has been quite a while staying "inactive"...

And to start off, here is a simple and delicious meal called Kampung Fried Rice. "Kam-pung" means Village. This fried rice is commonly served in Indian Muslim food outlets and it easy to prepare and taste great... Have fun cooking when you have left over rice at home....
When you cook at home, you can control the level of oil for healthy eating....

Look at this....simple and easy to cook.....just simply vegetables & eggs..

Simple Ingredients :

2 bowls of cooked rice

2 Eggs

Handful of shredded Cabbage, Carrots, Sawi (green leafy vege)

6 pcs Chilly Padi (small + spicy + nice aroma)

1 chopped onion

1 tsp anchovis granules

1 tbs dark soy sauce

Simple to Prepare :

1. Heat 2 Tbs oil in a wok and saute the chopped onions, chilly padi till aromatic

2. Add in the shredded vegetables and stir fry, next add in the anchovis granules, dark soy sauce, mix well

3. Put in the rice and stir to mix well till even coloured, a pinch of salt to taste

4. Push aside the rice, add few drops of oil and break the eggs in, allow the eggs to be slightly cooked at the sides

5. Finally, bring the rice on to the eggs and give it a good stir to mix well

6. Ready to Serve...Hot + Delicious!

Chinese Style Fried Vermicelli

A simple and easy to prepare delicious meal, free from MSG. This is a simple Chinese style fried vermicelli and takes less than 30 minutes to get it cooked and ready to eat...steaming hot! Great isnt it, and most importantly everyone have a good and happy meal :))

All you need: serve 5

  • 3 pieces of vermicelli - soak for 20 minutes
  • 150 gm prawns
  • 1 pc of chicken breast meat
  • 2 stalks of green leafy vegetable
  • 50 gm beansprout
  • 1 clove of garlic
  • 2 Tbs fish sauce
  • 2 Tbs light soy sauce
Simple Process :

1. Heat the wok and saute the chopped garlic till aromatic
2. Add in the prawns and chicken meat and stir fry till prawns turn pink and meat turns white
3. Add in 1/4 cup of water, fish sauce, light soy sauce and allow it to simmer for 3 minutes
4. Drop in the soaked vermicelli and green vegetables and cover the lid of wok, lower the heat for 5 mins
5. Lightly stir to mix the vermicelli with the ingredients for the next 3 minutes
6. Lastly add in the beansprouts and stir to mix well till beansprout soften for the next 3 minutes.
7. Ready to Serve

Yum Yum Vegetable Nuggets

This is a plate of tasty vegetable nuggets cooked with dark soy sauce and the wonderful curry leaves which gives a beautiful aroma to the dish, it's Lazy Mum's latest creation. Simple and taste good. The vegetable nuggets is made up of soy beans and mixed vegetables. My kids simply loves this dish and when served it is "now you see it, now you dont" :)) Wow.. it is fun to see the kids really enjoying this simple dish at the dinning table.


All you need:

  • a packet of vegetable nuggets
  • 3 sprigs of curry leaves
  • 2 Tbs butter
  • 1 Tbs dark soy sauce
  • 4 Tbs evaporated milk
  • 4 pips of chopped garlic


Simple Process :

1. Lightly pan fried the vegetable nuggets till golden brown, set aside
2. Melt the butter in the pan and saute the garlic and curry leaves till aromatic
3. Add in the dark soy sauce, evaporated milk and stir in the pan fried vegetable nuggets till it is well coated with the sauce.
4. Once the sauce has thickens, dish out and serve out with warm rice.


Have a happy meal free of MSG at home!

Stir Fry Fish

A delicious fish dish for the family. We love stingray cutlets as it has soft bones and most importantly the meat is tender and fresh. I had it stir fried with dried chilly and onion and complete it with dark soy sauce and oyster sauce.... So Yummy! It goes well with warm rice.


All you need :

  • 2 pieces of stingray cutlets - cut into small pieces
  • 4 dried chilly
  • 1 big onion - cut into wedges
  • 1 Tbs oyster sauce
  • 2 tsp dark soy sauce
Simple Process :

1. Heat the wok with a little oil and saute the dried chilly together with the onion till aromatic
2. Add in the fish and stir fry for 3 minutes, add in the oyster sauce, dark soy sauce, 3 Tbs water
3. Mix well and allow it to simmer over low heat
4. Allow it to simmer till gravy has thickens
5. Ready to serve

Fried Yam Bean Roll

Look at this delicious fried yam bean (bangkuang) roll aka fried sar kok. This speciality comes from Ipoh and can be found in food stalls that sell "Yong Tau Foo" with its well known smooth hor-fun aka rice noodle.

This is my first attempt making this delicious piece and was overwhelmed as it turns out just beautiful and taste great! After all, it is not that difficult to make and I am so happy I have finally know how to make it, thanks to the The Star Metro publication featuring the Perak state kopitiam fare not so long ago. I have modified the recipe slightly to suit our own taste.

All you Need :

1 yam bean (bangkuang) - about 500gm
150 gm fish paste
100 gm plain flour
1/2 cup fried shallots
2 tsp sugar
1 tsp salt
some pepper
3 sheets of beancurd skin - 18 x 20 cm

Simple Process:

1. Chopped the yam bean coarsely
2. Next, mixed together the chopped yam bean with the fish paste, flour, fried shallots, salt, sugar and pepper
3. Scoop 5 large scoop of the mixture and lay it on top of the cut beancurd skin, then roll up the mixture tightly on the beancurd skin. Seal the edge of the roll with flour paste. The diameter of roll can be approximately 5 cm in size.
4. Heat the steamer on high heat and steam the roll for 8 minutes, allow it to cool before cutting into pieces. The size can be around 1 to 2 cm thick, it is your preference.
5. Next, heat the wok with some oil and pan fry the cut yam bean roll till golden brown or till it is crispy.
6. Drain the oil before serving hot.

Dried Spinach Noodle

Hey...look at this bowl of delicious dried spinach noodle with crispy chilly anchovis. It is a simple meal for the family and it taste great.... I have garnished the noodle with minced meat, japanese sea spinach, half boiled eggs and a spoonful of sambal ikan bilis.. Yum! Yum!

The purpose of the half boiled egg is to enrich and smoothen the blanched spinach noodle. Spinach noodle comes in a dried pack and easily obtainable from hypermarket or the grocery stores.
Simple Process :

1. Stir fry the minced meat with some chopped onions adding light soy sauce, oyster sauce to give it a good flavour, set aside
2. Prepare the half boiled eggs and set aside
3. Soak the japanese sea spinach to soften it, no cooking is required
4. Just blanched the dried spinach noodle, garnish it with the half boiled eggs, cooked
minced meat, japanese sea spinach, add 1 Tbs crispy chilly anchovis and serve



This is how the plate of noodle looks like when it is all mixed before eating....so rich and delicious!

Seaweed Anchovis Fried Rice

Wow...this Fried Rice really taste good, if you like fried baby anchovis (baby ikan billis). I just love fried rice as it is can be easily "transformed". All you need is to acquire the skill of frying rice and there you are... a simple and easy home cook meal for lunch or dinner. My kids say "yum! yum!"



Look simple but smell great! Japanese Seaweed is nutritious...

Flower Bun

Look at this beautifully twisted HOME MADE flower bun and look at its glow. Yeah! Good work ... :)) This is a contribution from my hubby. It taste wonderful and goes so well with curry chicken. Looks simple, but taste great.


All you need :

300 gms of plain flour
40 gms sugar
1/2 tsp salt
1.5 tsp instant yeast
150ml warm water
2 Tbs shortening

The Process :

  • Sieve flour into large bowl and add salt
  • Mix warm water, sugar and instant yeast together in a bowl and rest for 5 mins
  • Next pour the mixture into the flour and mix it together
  • Add in the shortening and start to knead till it becomes a non stick dough
  • Next, rest the dough for 1 hour to double the size, cover with a cloth
  • Once the dough has doubled, re-knead it for 10 minutes
  • Leave it to rest for 10 - 15 minutes, cover with a cloth
  • Next, roll the dough and cut it into required size, flatten it into a rectangular shape
  • Prepare Ingredient 2 for applying on the rectangular dough
Ingredient 2 - 2 tbs shortening, 1 tbs sugar and mix well. Use this mixture to apply on
the flatten rectangular dough before "twisting" it into bun like.

Before steaming... the dough is resting..

  • After "twisting" the dough just like above photo, rest it for 10 minutes before steaming for 15 minutes.
Phuhyo....what a long process....hahahaha!
But it taste so nice, soft and tender, it is worth his effort after all!
