Jolly Rice Noodle

This is my new creation for fried "shorty" rice noodle aka loh si fun and my family love it - it's jolly good to eat! :)) It is simple to prepare and fast to cook, served within 20 minutes. I have it fried with cut pieces of dried chilly, chicken meat, cabbage with dark soy sauce and garnish with fried baby anchovis..... It is not spicy hot but just to add a nice aroma from the dried chilly. The fried baby anchovis gives an added flavour to the noodle!

All you need : Serve 3
  • a packet of rice short noodle (loh si fun)
  • a piece of chicken breast meat - cut into cubes
  • some cabbages - cut into strips
  • 4 pcs of dried chilly - cut into 2 - 3 cm in length
  • 1 clove garlic - chopped
  • handful of baby anchovis
  • 1 sprig of spring onion - chopped
  • fish sauce n dark soy sauce

Baby Anchovis - wash, drain dry and fry till crispy

Simple Process :
  • Wash, drain dry baby anchovis before frying it till golden brown, set aside for garnishing
  • Heat the wok with a little oil and saute the dried chilly for 2 minutes, add in the chopped garlic and saute till aromatic
  • Add in the chicken and stir fry till fairly cooked, add cabbage and stir fry
  • Next, add the rice noodle and a few drops of dark soy sauce and fish sauce in it, stir to mix evenly
  • Keep stirring well for next 5 minutes and dish out
  • Ready to serve, garnish with the fried baby anchovis and chopped spring onions

Chinese-Fried Noodle

A simple and easy to prepare Chinese Fried Noodle. It looks rather plain but taste simply great to eat along with Sambal Belacan (chilly pounded with roasted dried shrimp paste). This style fried noodle is a speciality from the northern part of Malaysia. As in the central part, the noodle used is fat and looks like Udon and fried with dark soy sauce. The fresh noodle is fried with prawns, meat, beansprout and green leafy vege. It is good to have during days when lazy mum has a busy schedule as it is fast to cook and good to eat..... :))

All you need : Serve 4
  • a packet of fresh noodle - wash before use
  • some medium size prawns
  • some chicken or pork
  • some beansprout
  • some green leafy vegetable
  • 1 clove garlic - chopped
  • 1 big onion - chopped
  • sambal belacan ** (home made or buy it from the shelf)

Simple Process :
1. Heat the wok with some oil, saute the garlic and onion till fragrant

2. Add the prawns and meat, stir fry till meat is lightly cooked

3. Put in the washed noodle, add 1/2 bowl water, close the lid of the wok and let it cook over medium heat for 5 mins

4. Add in the vegetables, beansprout and stir well till the gravy thickens within the next 10 minutes

** dark soy sauce can be added if you wish to have a dark color noodle

Fried Noodle Mamak

This was my first attempt and it turns up perfect...taste great and my husband comments was "wow, it taste real good" ....well, that is truly motivating!

The Penang locals call it Mee Mamak. This recipe is originated by the Indian-Muslim in Penang. It is simple as there are not many ingredients to add in, just need to apply a little frying skill to ensure the noodle has the right consistency, not to dry or too wet. I have turn it to a "vegetarian style" by excluding the prawn fritters, as again, being a lazy mum, prefer "no-fuss" ingredients.

What are the ingredients: - Serve 4
  • 1 pkt yellow mee (noodle)
  • 3 pcs fried beancurd (taukwa) - cut into small pieces
  • 3 boiled potatoes - cut into small pieces
  • some beansprouts
  • 3 lime - squeeze the juice
  • 1 big onion - chopped
  • some lettuce - for garnishing
  • 1 red chilly - for garnishing
  • some fried shallots - for garnishing
  • Ingredients for frying
  • 2Tbs grounded chilly paste
  • 3 Tbs Tomato sauce
  • 1 Tsp dark soya sauce
  • salt and sugar to taste
  • some grounded roasted peanuts

Simple Frying Process :

  1. Heat the wok with some oil, stirfry the chopped onions and grounded chilly paste for a minute
  2. Add the noodle, tomato and dark soya sauce (mix the 2 with a little water), stir well over medium heat
  3. Drop in the cut boiled potatoes, fried beancurd, beansprouts and stir well, add salt to taste. Sugar is optional - your preference
  4. Keep the noodle moist, lastly sprinkle some grounded roasted peanuts over the noodle and stir to mix
  5. Garnish with chopped lettuce and red chilly, fried shallots and squeeze some lime juice on it
  6. Serve hot...

** Eggs may be added, it takes a little skill or else the whole wok of noodle will have a soggy look...
